Bitter gourd or ampalaya is one of the best vegetables locally grown. It is a good source of dietary fiber, vitamins, minerals and anti-oxidants.
I have been looking for alternative food products that can replace meat. One of these is Quorn, which is meat-free and is made up of mycoproteins.
Using a part of this Quorn Meat-free grounds, I cooked this together with ampalaya or bitter gourd.
Ingredients:
* two medium tomatoes, diced
* 3-4 garlic cloves, diced
* one small onion, diced
* 1/4 cup of Quorn meat-free grounds
* 1T oyster sauce
* 1 1/2 cups of ampalaya, cut in strips
* Salt and pepper to taste
* 1 egg, beaten
Procedure:
1. Sauté the first three ingredients with a little oil.
2. Add the meat-free grounds and cook for a few minutes. Add a little water at a time to avoid getting too dry.
3. Add the ampalaya, cover with a lid and cook for a few minutes.
4. Season with salt and pepper.
5. Add the beaten egg when the ampalaya is cooked. Mix well to have the egg scattered.
6. Serve warm.
