I used to make pancakes using pancake mixes but not so much anymore.
Here is a healthy pancake recipe, Banana and Eggs, that I’ve tried and everybody raved about:
Best served still warm:
Ingredients:
- 4 pieces mashed plantains
- 2 eggs
- 2T coconut oil
- a handful of chocolate chips
Mix all the ingredients together. If you feel it is too runny, add a banana or two. If you feel it is too dry, add an egg, The consistency depends on how you want your pancakes cooked.
There was a recipe that calls for baking powder to make the pancakes fluffier but I didn’t do that.
Cook on a flat non-stick pan. You can melt butter before you put the pancake mix if you want to.
No need to use those high fructose corn syrup because the bananas give enough sweetness already.
