As promised, here is the Sneaky Tuna Nuggets recipe using Soyami chips.

First off, why the word sneaky in the recipe name? It’s because there’s *whispers* sweet potato and carrots in it. No kidding. Yes, sweet potato or better known as camote and carrot IN it. This recipe was introduced by Nadine Tengco, a certified nutritionist.

Here’s the super easy-to-prepare Tuna Nuggets recipe with words in italics as my variation:

  • 1 can Red Label Century Tuna Solid in Water, drained (I used two)
  • 1/3 cup sweet potato and carrots puree -> boiled sweet potato and carrot chunks, mashed or pureed (I used 3/4 of a cup)
  • 1 Omega 3-enriched egg (You can use ordinary egg, I think I used the Vitamin E enriched variety)
  • 1 pack crushed Soyami Chips in plain flavor (I used bread crumbs because I only got a pack of Soyami chips for this)
  • 1 tbsp chopped green onions (I used 2 tbsp)
  • 2 tsp reduced sodium soy sauce (I used ordinary soy sauce)
  • 1/8 tsp McCormick ground onion (I used very finely chopped onion)
  • 1/8 tsp McCormick ground garlic (I used grated garlic)
  • 1/8 tsp black or white pepper Read the rest of this entry »
