We love apple pies. Who doesn’t? And with a box of apples that a trusted brand gave last Christmas, it was a must that I make apple pie.

I made Apple Cobbler.

Apple Cobbler

I found a simple and easy to make recipe online but I tweaked a bit for the second time I baked the Apple Cobbler.

Ingredients:

  • 4 apples (peeled and sliced) I used 3 apples.
  • 3/4 cup sugar I used 1/3 cup
  • cinnamon I used a few pinches of cinnamon and nutmeg.
  • 1/2 cup pancake mix I used 3/4 cup pancake mix
  • 3/4 cup milk I used 1/2 cup milk
  • 4 tbsps butter (cold, in pieces)

NOTE: The words in bold and italics are the tweaks I made. I followed the first recipe and it was very sweet , soft and the pancake mix dough was nowhere to be found and there was just too much of the apples.

For the second time, I reduced the number of apples, added more pancake mix and reduced the amount of milk and sugar. The family loved the second version.

Procedure:

  1. Preheat the oven to 180 Celsius.
  2. Wash the apples thoroughly even if you have to peel these. Slice thinly. Place the apple slices into a glass baking dish and sprinkle with sugar, nutmeg and cinnamon. Mix together.
  3. Mix the pancake mix and milk together in a separate bowl. Mix well to avoid lumps. Pour over the apples and dot with butter.
  4. Place into the oven and bake for 1 hour or until the top is golden brown

You can add a scoop of vanilla ice cream on top to make this an Apple Cobbler ala Mode.

NOTE: The eldest daughter said maybe next time, I ought to add a little salt or use salted butter instead.
