Yesterday, I was able to get a bag of grated coconut at the supermarket. I wanted to use it immediately and so I looked in the net for some ideas on how I will use this. I got two ideas and I merged these two ideas to come up with this pechay-wrapped cream dory cooked in coconut milk.
Ingredients and Procedure:
- Wrap sliced cream dory fillets using pechay leaves.
- Saute sliced onions, tomatoes, garlic and ginger in coconut oil
- Put the wrapped cream dory on top of these sauteed vegetables once done
- Pour the freshly squeezed coconut milk from grated coconut
- Cover and simmer until the coconut milk is almost dry.
- Season with salt and pepper.
Everyone loved this (I think because they got no choice, lol) because it was tasteful due to the combination of sauteed vegetables and the coconut milk.
