Chicken Provencal. My version.
Ingredients:
- fried chicken pieces (thighs are good parts)
- chopped onion and garlic
- canned stewed tomatoes
- black olives
- olive oil
- boiled potato marbles cut in halves
- 1/2 – 3/4 cup of chicken broth
Procedure:
- Fry chicken pieces and set aside
- Saute onions and garlic and canned stewed tomatoes in olive oil
- Add the chicken pieces, chicken broth, olives and potato marbles and simmer
- Season to taste ( I used oyster sauce, salt and pepper and McCormick Italian seasoning)
You can opt to not include the potato marbles so that you can use this with pasta.
Instead of canned tomatoes, fresh cherry or diced tomatoes can be used. You can also use finely chopped fresh basil.
