Vegetarian Shepherd’s Pie

Vegetarian Shepherd's Pie

Ingredients:
1 sm onion, diced
5 pcs crushed garlic
1T olive oil
2T oyster sauce or soy sauce
2 med carrots, cubed in small pieces
1 1/2 cups sprouted mung beans
1/2 red bell pepper, cubed
10pcs string beans, cut in small pieces

Vegetarian Shepherd's Pie

Toppings:
2 1/2 cups steamed and mashed potatoes and squash
Butter
Salt and pepper to taste

Procedure:
1. Heat olive oil and saute onion and garlic.
2. Add the vegetables and oyster/soy saucd. Cook for a few minutes.
3. Transfer in a baking dish.
4. Top with steamed potatoes and squash mashed with butter and seasoned with salt and pepper.
5. Bake for 20-25 minutes.

Vegetarian Shepherd's Pie

Serve warm with buttered toast.

NOTE: You can add any vegetables you feel like maybe some broccoli, beans, mushrooms. The idea is to use potatoes + butter + salt and pepper (or other spices) to top the vegetables. I just added some squash because I have some.

If you do not fancy using all vegetables, you can opt to use ground beef, carrots and corn instead.
