Sweet and Sour Tofu
My children love sweet and sour sauce, whether with pork or fish. I tried making this sweet and sour tofu for dinner as a vegan entree and they were raving about it. They didn’t look for any meat and they even had second helpings.
Ingredients:
Tofu, 4-6 pieces, fried and cubed (look for the tofu that has a few ingredients). Before you fry, bring out the tofu and lay these on a flat surface. Put a heavy object on top of the tofu and press a bit to remove excess water.
For the sauce, I can’t give exact measurement but here goes:
1/2 cup of tomato sauce (small pack)
1/4 cup water
2T muscovado sugar
2T white vinegar
sliced red bell pepper
Mix all these and bring to boil. Once bubbles form, turn the heat to low. Be careful not to burn the sauce and remember to stir continuously. Add the fried and cubed tofu. Coat the tofu with the sauce and cook in low heat for a few minutes. Serve warm.
Notes:
You can skip the sugar and add pineapple juice with pineapple bits.
You can add slices onions, carrots and green bell pepper. I only had RBP (haven’t been able to do grocery tasks over the weekend) so that’s what went into the dish.
The children thought the sauce tastes like it had pineapple juice in it but there was none.
