As the resident homecook, I try hard to serve healthy food to my growing children.
One of their favorites is crispy fried chicken fingers. Here is how I prepare the crispy fried chicken fingers using chicken breast fillet (no skin, no bones too):
- cut chicken breast fillet lengthwise just like so
- dredge in a combination of panko, salt and pepper
- fry in hot oil
- let the excess oil drip or put on paper towels that will absord excess oil
This is the eldest child’s packed lunch. The crispy fried chicken fingers are served with multi-grain rice. On the other side of the lunch box is a slice of banana bread, baked around 5:00 am. Hah.
