This is Tuyo Pasta that I cooked two weeks ago which should have been featured also two weeks ago here in Food Friday.
Here was how I prepared the Tuyo Pasta:
Ingredients:
- 500 grams spaghetti or Angel Hair noodles (cook according to instructions)
- (deboned) Tuyo, depends on how much you want to use (you can use the bottled ones)
- lots of crushed (native) garlic
- tomatoes cut in slices
- olive oil
- crushed capers
Steps:
- Remove the tuyo’s head and tail as well as the small bones on the stomach side because these are painful when swallowed. Cut the tuyo (you can use your clean bare hands) in flakes.
- Brown the crushed native garlic in olive oil
- When the garlic has turned brown, put in the crushed capers and cook for a few minutes
- Add the tuyo flakes and cook. Season with a bit of salt (go easy on the salt!) and pepper.
- Drizzle the tomato slices with olive oil and a bit of salt and bake for 10-15 minutes.
- Add all these together and toss in pasta.
- Serve hot.
- Serve with warm buttered bread.
You can add sliced olives to the dish if you want.
