We love pancakes and Sunday mornings are perfect to have these for breakfast. The children put honey on the pancakes instead of corn syrup masquerading as maple syrup. We also like sweetened plantain bananas as toppings on the pancakes.

The sliced plantains are cooked in a non-stick skillet pan with very little olive oil. Muscovado sugar is mixed and this is cooked until sugar caramelizes.
For creamier pancakes, I use milk instead of the usual water called for in the ingredients.
I use those boxed pancake mixes (insert roll eyes emoticon here). I plan to make pancakes from scratch just as long as I am not in a hurry to make packed food at 4am 😉
