My children love potato omelet, cooked with lot of garlic bits and seasoned with good old salt and pepper.
Here is another version I made, potato omelet with kangkong or water spinach.
I just browned garlic bits in olive oil, added the cubed (small sizes) potatoes and cooked these till soft. Added the small parts of kangkong (cut with scissors) and beaten eggs and cooked till the eggs were done.
Did the children eat this potato omelet with kangkong? They did.
Tip on how to clean the kangkong: wash first in running water. Put in a deep bowl with water and put some salt or vinegar in it. Drain the water it was soaked in and wash again.
