Mongo Sprouts and Tofu

I always cook simple food but packed with nutrients. I am glad the children are able to appreciate my efforts and eat what is put on the dining table. They have no other choice! lol.

Last night we had a kinda grilled restaurant dinner of bangus sisig and kangkong with garlic bits but because we were all super hungry, I have forgotten to take photos. Imagine that!

Here was the other night’s dinner though: mongo sprouts (mongo toge) with tofu squares, carrot slices and bokchoi.

Nothing complicated I just sauteed garlic and onions, added the tofu. When these were cooked, I added a little water with salt and pepper and soy sauce. I added the sprouts and carrots and covered the pan while I turned the heat to low. When everything was almost cooked (not too cooked though), I put in the bokchoi, covered the pan and turned off the heat. This works well with me because I cook with electricity. I removed the pan from the stove after a few minutes.

As I always do, I wash the mongo sprouts and bokchoi with water where I added salt. Here is a tip on how to wash leafy vegetables.

Mongo sprouts can be eaten raw.

 

Potato Tofu Omelette

  This was a potato and tofu omelet I made for breakfast. The usual recipe calls for potato and eggs but this time I used tofu.
