Squash Leche Flan

Looking at Squash Leche Flan photos in Google makes me do a “facepalm” because my photos are not as “perfect” and “smooth” looking as theirs.

On the other hand, everyone loved what I did and that is just the affirmation I need 😀

Lunchbox Fillers

Ingredients:

  • 1 cup steamed and mashed squash
  • 1 cup evaporated milk
  • 3 egg yolks (recipe I saw calls for only two)
  • honey

Procedure:

  1. Steam and mash the squash.
  2. Mix together the milk, evaporated milk and the eggs.
  3. Pour honey in the llanera until the surface is covered with it. Don’t put too much though. *
  4. Put in llanera and cover with aluminum foil.
  5. Steam for 20-25 minutes.

*The reason I used honey was because I use an induction stove and there’s just no way I could melt/caramelize sugar in the llanera. I did try one llanera bain-marie style to caramelize the sugar but I wasn’t patient enough to do this with two other more llaneras.

It tastes like leche flan but with a bit of distinct taste(and smell) of squash. The leche flan wasn’t too sweet because there was no sugar in it.

Your choice whether to use caramelize sugar or honey with your leche flan. Either way, Squash Leche Flan was devoured in record time, I had to put aside some for the husband just in case 😀

This yielded 2 regular size and one small llaneras.
