Baked Chicken, Potatoes and Carrots

What’s for dinner? Baked chicken, potatoes and carrots was the fuss-free dinner for this family.

Baked Chicken, Potatoes and Carrots


  • 3pcs of skinless chicken breast fillet, cubed
  • 3 medium-sized potatoes, cubed (with peel on but scrubbed with salt using fruit/vegetable brush)
  • 1 medium-sized carrot, cubed
  • 1/3 cup olive oil
  • a few dash of Italian seasoning
  • salt and pepper
  • grated cheese


  1. Pre-heat oven.
  2. Toss the chicken cubes in olive oil until evenly coated.
  3. Add the potato and carrot cubes and mix until coated with olive oil. Add more olive oil if needed.
  4. Add salt, pepper and Italian seasoning.
  5. Cook in the oven for 30mins.
  6. Add the grated cheese before serving.
  7. Serve warm.

The children had this without rice.

Note: You can add other vegetables like brocolli or cauliflower, among others.
