Avocado Leche Flan

October 1st, 2014

Avocado Leche Flan. Looks ewww because it has green bits, but the children “inhaled” these and so I know they love it.

Lunchbox Fillers

I have almost forgotten that I have a big avocado in the fridge so when I finally got to do the Avocado Leche Flan, avocado was a bit soft already. It didn’t stop me from doing the leche flan though because the kids are waiting for the promise of another leche flan recipe 😀

Lunchbox Fillers

Ingredients:

  • 1 whole avocado ( I used only half because ours was almost 3/4 a kilo big)
  • 1 cup of evaporated milk (you can also use condensed milk)
  • 2 eggyolks
  • honey

Procedure:

  1. Mash the avocado.
  2. Mix in the milk and egg yolks.
  3. Pour a little honey on the llanera, just enough to cover the inside (I use induction stove so I can’t caramelize sugar on the stove)
  4. Pour the avocado mixture and cover with aluminum foil.
  5. Steam for 20-25 minutes.

This yielded two regular sized llaneras.

Verdict: Since my kids are avocado eaters, they loved it. I did too. There is that distinct avocado taste in it, just like the Squash Leche Flan I made.

I made the other half of the avocado with the egg whites and still they ate the flans 😀

Homemade Avocado Ice Cream

We have plenty of creamy and fleshy avocados given by the MIL.
