Slow Cooked Porchetta

February 6th, 2014

Here is another slow cooker recipe I cooked last night (post done Feb04,2014, this is scheduled post)  : Porchetta

Slow Cooked Porchetta

Porchetta is an Italian culinary recipe and is a savoury, fatty, and moist boneless pork roast. The pork is usually boneless, arranged with layers of stuffing, mostly with salt and pepper, garlic and spices. It is then rolled and roasted.

I can’t possibly roast nor bake this for a long time, so I used the slow cooker.

Slow Cooked Porchetta

Ingredients:

1 1/2 kilo lean pork (I had 3 pieces of lean pork, one with thin skin on)

kitchen twine (I didn’t have this)

sliced onions (onion rings)

Dry rub: salt, pepper, paprika, rosemary, and finely chopped garlic (You can add other spices if you like)

Procedure:

  1. Mix together the dry rub ingredients and massaged on the meat.
  2. Tie the meat with kitchen twine to keep the dry rub in.
  3. Refrigerate and leave for a few hours.
  4. Arrange the onion slices on the bottom of your crock pot.
  5. Arrange the pork on top of the onions.
  6. Cook on LOW for 7-8 hours.
  7. Strain the jus or the sauce that will be accumulated.
  8. Serve warm with a little of the jus.

Freeze leftover and heat in oven with the jus to keep the meat moist and succulent.
