Chewy and moist mini-muffins:
- mashed plantains (2-3 pieces, big size)
- rolled oats (half a cup)
- coconut oil (2-3T to prevent the muffins from sticking on the muffin pans)
- cacao nibs or chocolate chips
Mix all ingredients together and bake for 10mins in a preheated oven.
For the baked oatmeal, lower right photo, here is the recipe:
- mashed plantains (2-3 pieces, big size)
- rolled oats (half a cup)
- milk (half a cup)
- coconut oil (2-3T to prevent the muffins from sticking on the muffin pans)
- cacao nibs or chocolate chips
Mix all ingredients together and bake for 15-20 minutes.
These are basically the same except for the addition of milk in baked oatmeal and the baking time.
