This was a potato and tofu omelet I made for breakfast.
The usual recipe calls for potato and eggs but this time I used tofu.
Here are the ingredients:
- 3 medium sized potatoes, peeled and cubed (very small cubes for easier cooking)
- 1 small size diced onion
- 3-4 cloves garlic, diced
- 3 cubes tofu, crumbled
- 2 T less-sodium oyster sauce
- salt and pepper to taste
Just saute the onions and garlic and add the potatoes. Soften the potatoes. Add the crumbled tofu and season to taste. Cook until done. Easy peasy.
The kids ate this and said the tofu felt like egg except of course, there is that distinct tofu smell to it.

I love tofu and with potato it’s new for me. It looks yummy and I want to try it. ^_^
